Blueberry Streusel muffins

Are some of you searching for something delicious to make at home instead of dining out? Are your kids (or brothers!) hungry for something warm and sweet? Then I have just saved your life! πŸ˜‚

I’m so excited to share this recipe with you because it is one of my total favorites! We’ve made it quite a few times for our family, and if I can give you any idea of how good they are, in a house with four kids; they’re gone fast!

(One tricky thing about this recipe is that it employs a method called “cutting in” the butter with the dry ingredients. As you know, butter is generally considered a ‘wet’ ingredient, whereas flour and sugar are “dry” ingredients. To mix the butter with the dry ingredients, cut it up into small pieces and stir until it’s a crumbly mixture.)

Ingredients:

  • 2 1/2 cups flour
  • 1 1/4 cups sugar (or a healthier alternative like coconut sugar.)
  • 1 Tbsp baking powder
  • 1 cup butter
  • 1/2 tsp cinnamon
  • 3/4 cup milk
  • 2 eggs
  • 1 1/2 tsp vanilla
  • 2 cups blueberries (fresh or frozen, but frozen will melt and turn the batter purple! πŸ˜‹)

Instructions:

  • Combine flour, sugar, and baking powder. ‘Cut in’ butter in tiny pieces.
  • Remove 3/4 cup of this mixture and set it aside in a small bowl. Add cinnamon.
  • In another bowl, combine milk, eggs, and vanilla. Add to flour mixture. Stir just until moistened.
  • Stir in blueberries gently.
  • Spoon batter into paper-lined muffin cups. Sprinkle with the cinnamon-mixture.
  • Bake 30-35 minutes at 350 degrees F. Cool, and enjoy!
