Are some of you searching for something delicious to make at home instead of dining out? Are your kids (or brothers!) hungry for something warm and sweet? Then I have just saved your life! π
I’m so excited to share this recipe with you because it is one of my total favorites! We’ve made it quite a few times for our family, and if I can give you any idea of how good they are, in a house with four kids; they’re gone fast!
(One tricky thing about this recipe is that it employs a method called “cutting in” the butter with the dry ingredients. As you know, butter is generally considered a ‘wet’ ingredient, whereas flour and sugar are “dry” ingredients. To mix the butter with the dry ingredients, cut it up into small pieces and stir until it’s a crumbly mixture.)
Ingredients:
- 2 1/2 cups flour
- 1 1/4 cups sugar (or a healthier alternative like coconut sugar.)
- 1 Tbsp baking powder
- 1 cup butter
- 1/2 tsp cinnamon
- 3/4 cup milk
- 2 eggs
- 1 1/2 tsp vanilla
- 2 cups blueberries (fresh or frozen, but frozen will melt and turn the batter purple! π)
Instructions:
- Combine flour, sugar, and baking powder. ‘Cut in’ butter in tiny pieces.
- Remove 3/4 cup of this mixture and set it aside in a small bowl. Add cinnamon.
- In another bowl, combine milk, eggs, and vanilla. Add to flour mixture. Stir just until moistened.
- Stir in blueberries gently.
- Spoon batter into paper-lined muffin cups. Sprinkle with the cinnamon-mixture.
- Bake 30-35 minutes at 350 degrees F. Cool, and enjoy!
